SIMPLE WATERMELON MINT SALAD

With Labor Day weekend just around the corner, many of us will be capping off the summer with one last cookout, soaking in every last bit of summer. Whether its getting together with a bunch of friends for a cookout and bonfire or kicking it at the lake, the one thing that will remain the same across the board is...FOOD.

If you're like me, preparing a dish for a group of people can be a bit of a daunting task. When I was recently invited to a group potluck dinner, I wanted to bring a dish that was both simple and healthy. I searched Pinterest to get a few ideas and came across this fresh mint watermelon salad.

It is RIDICULOUSLY easy to prepare (and was a total hit). There is no way to screw this one up. This salad was light, fresh, and healthy. Perfect to offset the copious amounts of chips and quac you're likely to consume. Not to mention, this dish can easily be made under just $10.

What you'll need:

- watermelon

- mint leaves

- feta

- strawberries

Directions:

1. Simply chop up the watermelon and strawberries and throw all the ingredients into a large bowl.
