CAULIFLOWER RASPBERRY SMOOTHIE

Yes, you read that correctly. Cauliflower smoothie. I know most of you are shaking your head or pretending to throw up, but hear me out. The base of most smoothies comes from an entire frozen banana and while bananas are great for you, they do contain a lot of natural sugar. Frozen cauliflower is a great alternative for when you're looking to watch your sugar intake.

I first heard of the idea from one of my favorite food bloggers, Lee Tilghman. Her instagram is basically what food dreams are made of. Her smoothie bowl concoctions give me life, but also fill me with envy. Hopefully one day, my smoothie or oatmeal bowls will look half as good as hers.

I tried her cauliflower recipe one day after a workout and was immediately hooked. It was the creamiest and tastiest smoothie I had ever made. Now, I'm constantly subbing banana for frozen cauliflower in my smoothies.

So before you shake your head in disgust, I beg of you to at least give it ONE try. There are so many ways to doctor up smoothies to disguise all the healthy foods you throw in. Adding cinnamon, protein powder, or peanut butter are just a few simple ways to add flavor without all the bad calories.

Here's what you'll need:

  • frozen cauliflower

  • fresh raspberries

  • spinach

  • unsweetened coconut milk

  • cinnamon

  • organic plant based vanilla protein powder

I topped my smoothie with chia seeds, flax seeds, bee pollen, blueberries, unsweetened shredded coconut, half a banana, and a drizzle of almond butter. I also added some mint leaves for a little garnish because let's be honest...food tastes better when it looks pretty.

Directions:

1. Toss everything into your Vitamix or Nutribullet and blend until smooth and creamy.

2. Top with chia, fresh fruit, flax seeds, etc.

3. Lick the entire bowl clean.
