WHOLE WHEAT GREEK YOGURT PANCAKES

Being a creature of habit, I love routine and consistency. I love switching out the same 3 meals for breakfast and having my morning routine down to a T. However, some days when I wake up to overcast clouds and cool air, I like allowing myself to move at a slower pace and enjoy the leisurely atmosphere. On those days, I treat myself to pancakes.
Typically I like to have a wholesome, nutritious breakfast that will give me energy for the day, especially for my workout. Pancakes can sometimes make me feel lethargic and sleepy afterwards which is fine for a lazy day but not fine when you still have a full day ahead of you.
These whole wheat greek yogurt pancakes are the perfect mix of indulgence and nutritious. The recipe makes a whole bunch, but if you tackle only 2-3, you won't feel bloated or sleepy afterwards (and yes, you will feel satisfied after just 2-3).
I topped mine with some fresh figs I picked up from Trader Joe's. If you haven't tried figs before, I highly recommend them. Their sweet flavor is subtle making them perfect add-in's for yogurt, oatmeal, salads, etc.
Here is what you'll need:
2 eggs
1 1/2 cups whole wheat flour
2 TSP salt
1 TSP vanilla
2 TBSP organic coconut oil
3/4 cup plain Greek yogurt
3/4 unsweetened coconut milk
Top with fresh fruit, 1 TBSP maple syrup and 1 spoonful of melted peanut butter.
