MEXICAN KALE SALAD

There is nothing I love more than Mexican food. While Medditerranean (hello, falafel) is a close second, guacmole, tacos and spicy margaritas always take first place. Eating healthy can sometimes sound like a daunting and expensive task, but there truly is nothing complicated about eating clean. Grocery stores like Trader Joe's and Aldi offer so many healthy options at such affordable prices.

Lately, my go-to lunch has been this super simple Mexican kale salad. All the ingredinets are simple, inexpensive ingredients that you likely already have. Choose your preferred protein (salmon, chicken, shrimp, chickpeas) and lunch is served in under 10 minutes.

Ingredients:

  • green onion

  • red onion

  • corn (I use the Mexican corn from Trader Joe's)

  • baby tomatoes

  • avocados

  • kale

  • *chicken, shrimp, salmon, chickpeas* (choose one protein of your choice)

For dressing, I'll use lemon juice or a cilantro avocado yogurt dressing; both healthy and light options!
